Party Time: Funfetti Sugar Cookies
It all started with my grandma’s sugar cookie recipe and my complete lack of interest in rolling out dough. Add some sprinkles (because why the hell not?), chill, scoop, and BAM you’ve got a party.
Funfetti Sugar Cookies
Makes 2 dozen cookies
1/2 cup (1 stick) butter, softened (I’m a rebel and use salted butter)
3/4 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons corn starch
3/4 teaspoon baking soda
1/2 cup sprinkles
Make sure your butter is softened and your egg is at room temperature before creaming with sugar and vanilla until super light and fluffy. Lighter and flufflier than that. About 5-7 minutes worth of medium-high mixing.
In a separate bowl, sift flour, corn starch, and baking soda and slowly add to creamed mixture until just combined. Mix in sprinkles by hand.
Use cookie scoop to portion dough onto baking sheet and refrigerate for a minimum of two hours. Bake well chilled dough in 350 degree oven for 10-12 minutes. Cookies should not brown — they will firm up as they cool but will stay chewy. Store in an airtight container for 2-3 days (do fresh baked cookies last 2-3 days in anyone’s house?).Yum Yum
