Mexican Muffin Pizza
I swear that the only useful thing my husband brought with him when we got married with a toaster oven. I’d never had one before and now I can’t believe I ever lived without one.
With my new found love of all things Kitchenaid, I’m dying to get my hands on a Kitchenaid toaster oven, but I need a substantial amount of toaster oven recipes to justify the purchase.
Here’s one of my favorites. Have any others to share?
Mexican Muffin Pizza
1 oz. pared, cubed avocado
1/2 med. tomato, diced
1/4 c. scallions, chopped
2 tsp. lime juice
1 English muffin, split & toasted
1/2 c. low sodium salsa
1 1/2 oz. Cheddar cheese, shredded
In small bowl, combine avocado, tomato, scallions, and lime juice; set aside. Preheat boiler of toaster oven. Spread salsa evenly on muffin halves and sprinkle with cheese. Broil 5 to 7 minutes, until bubbly. Top evenly with avocado mixture.

I used to think that the toaster oven was useless, until our REAL oven broke. Sadly, our diet consisted of frozen pizzas, chicken nuggets and french fries. The range oven was basically used to reheat frozen food (as opposed to cooking things made from scratch). The toaster oven kept us from starving for the several months until we could replace the range oven, and even then we wondered if we really needed one anymore.
