Couscous with Feta & Cilantro
My neighborhood HEB is fantastic – I kind of live near the snotty side of town (and I mean that in the best way possible), so they have lots of Central Market offerings and wonderful pre-made meals. My favorite is this delicious couscous that I habitually add to my basket every week – it’s light and tangy and you can make a perfect meal out of it by adding bits of chicken or shrimp.
Much to my disappointment, it hasn’t been available for the past few weeks, which has caused me to have some major couscous cravings, so I set out to crack the recipe myself. And if I may toot my own horn for a moment, I came up with a damn fine copy-cat recipe on the first try.

Couscous with Feta & Cilantro
- 2 cups cooked couscous
- 8 cubes Dorot frozen chopped cilantro
- juice of one lemon
- 1 teaspoon olive oil
- 1/2 cup crumbled feta
Saute cooked couscous in olive oil. Add cilantro cubes and lemon juice and stir until cilantro is thawed and incorporated. Set mixture aside and let cool slightly. Add feta and toss. Good warm or cold.
