My Four Foods on Friday stride is broken because last week’s meme was postponed, but that’s okay, because Val is a very busy woman, but we all understand.

1. What’s your favorite form of potatoes?

Homemade smashed potatoes with the skin on, lots of butter, sour cream, salt, and pepper. When I was in college I used to make smashed potatoes all the time. Add that to my list of specialties which included noodles and butter, McDonald’s Happy Meals, and vanilla frosting.

2. Pie crust. Premade or from scratch?

I don’t really like pie, so I’m going to go with premade because I buy the premade graham cracker crusts to make cheese cake and magic bars, and those are delish.

3. Vegetables. Fresh, frozen or canned?

All of the above. I love veggies and and don’t discriminate.

4. What one dish do you wish you could prepare better?

Mac & cheese! Mike and I are still on the eternal search for the best mac & cheese recipe ever, so if you’ve got one, pony it up! I’ll even post an entry with pictures and a link back to your blog!

    Macaroni & Cheese

    Serves 4-6

    10 oz elbow macaroni
    2 eggs
    1 tbsp. dry mustard
    1/2 tsp. salt
    1/4 tsp. pepper
    2 cups half & half
    1 lb. sharp cheddar cheese, grated

    Preheat oven to 375. Cook & drain macaroni. In a lg. bowl, lightly beat eggs with mustard, salt & pepper. Stir in half & half, then cheese, then macaroni. Pour into buttered 2-qt. casserole, bake 25 min. Put under broiler 1 min. to make top brown and crisp.

  3. You don’t like pie? Yikes. I wish I didn’t. I also wish I didn’t like cake, fried foods and ice cream. LOL

  10. Blaire - I went through the Drive-Thru! I lived off of noodles, Happy Meals, and frosting in college, and I was the thinnest I’d ever been!

  11. Clair - the smashed potatoes aren’t anything special, but they are fabulous! Add some chives, too!

  12. Karen - I’m more of a salty snacker than a sweet snacker, so not liking pies doesn’t do me much good. Haha.
